Ingredients

  • 1 egg white
  • 1 Tablespoon water
  • 1 1/2 Cup Corn Flakes, crushed
  • 2 Teaspoons grated Parmesan
  • 1/4 Teaspoon Italian seasoning
  • 1/4 Teaspoon paprika
  • Dash of cayenne
  • 1 Pound boneless chicken breasts

Directions

Preheat the oven to 400 degrees and line a baking sheet with parchment paper.

In a shallow bowl combine the egg white and water. In another shallow bowl, combine the Corn Flakes, cheese, and seasonings, and stir until combined. Cut the chicken breasts horizontally and then cut into strips.

Dredge the chicken in egg whites, then dip into the Corn Flake mixture. Place on the baking sheet. Bake until the chicken is cooked through, about 18 minutes.

Baked Chicken Fingers

Tender Homemade Chicken Fingers - an easy to make oven baked breaded chicken goujon recipe, perfect for the whole family.

These chicken fingers (or goujons) are my kids favorite and best thing of all they are also Slimming World friendly.

Chicken, homemade breadcrumbs and just the right seasoning makes these perfect.

The chicken is always so tender and doesn't have that horrible processed taste that frozen ready made ones tend to have. You can always be sure that these contain real chicken.

You can really mix these up with different seasonings/herbs added to the breadcrumb mix too.

These are also great served with my Low Sugar/Low Syn Tomato Ketchup.

The sides are totally up to you, but I normally pair with my Perfect Oven Baked Fries and a mixed salad.

For an SP or Original day, you could serve with some roasted butternut squash or just a salad is a perfectly good meal.

How to Make Air Fryer Chicken Tenders in the Instant Pot Vortex

Chicken tenders, also known as chicken strips or chicken fingers, are cuts of meat from the side of the breast of the chicken (learn more about chicken cuts here). They are white meat and tend to be easy to cook either in an air fryer, oven, or regular fryer. By using the air fryer, you use less oil, which cuts the calories some and makes them more healthy.

For my Instant Pot Vortex chicken tenders, I started by coating the tenders with milk. You can also use Buttermilk, which I prefer and really helps keep things moist (see also my Instant Pot Vortex Rotisserie Chicken recipe). Then, I dipped each tender in flour, followed by egg, and then followed by a mix of Panko bread crumbs and seasoning. You can use other things in place of Panko if you like such as crushed cornflakes or regular breadcrumbs. You can also make these without Parmesan if you want a more basic air fryer chicken tender recipe.

The key to getting your chicken tenders crispy in the air fryer is to give them a good spray with oil before putting them in. Hold your spray mister or can fairly high so that the pressure does not move the flour coating off of the chicken strips.

Be sure to give the tray a good coating too. I like to place a paper towel under mine when I spray it so that the counter does not get super oily. I like to use Avocado oil, which has a high heat point and I like brands that are pure so that there are no ingredients that can damage cookware. This is one of my favorites.


Crispy Fried Chicken Tenders

Truly crispy fried chicken tenders are a dinnertime staple you&rsquore whole family will love. Get all my tips for making that crispy crust you crave, seasoning like a pro (and shortcuts if you don&rsquot know how), and fry them up like &ldquocast iron skillet&rdquo is your middle name.

I&rsquom not going to lie or sugar coat this. If you haven&rsquot ever fried anything, you&rsquoll more than likely mess this up.

Because there&rsquos some sort of rule that says that if you don&rsquot get your first cast iron skillet by the age of 5, you won&rsquot be able to hack it as an adult. No&ndashfrying takes practice. Lots of it.

Sometimes you&rsquoll burn things, sometimes you&rsquoll cook it too low and all the breading will fall off. Sometimes it will be golden on the outside and raw in the middle.

You just can&rsquot give up. If you need to, use an electric skillet where you can set the heat or a fryer for safety. Please don&rsquot burn your house down.

Don&rsquot walk away from it. Don&rsquot do laundry. Don&rsquot take a nap. (I know a friend who has!)

My crispy fried chicken tenders don&rsquot have any buttermilk listed, but if you want to wet yours in some before you drop them in the first round of flour, you can do that. I just didn&rsquot here because I get the best crust with egg and flour.

No matter what&ndashonce you get the hang of this, you can FRY ANYTHING.

You can make your family the most unhealthy ones on the block. I mean&ndashthink about it: donuts, pickles, Twinkies, funnel cakes. Oh man. Funnel cakes. I&rsquom just looking out for your best interests here.

Tips for the best crispy fried chicken tenders

-Make sure your flour is well seasoned. If you aren&rsquot confident in that area, I&rsquove given you measurements for salt and pepper in the recipe.

-Use a good skillet that controls heat well. Of course I&rsquom going to recommend cast iron.

-Press the breading on your chicken tenders really firmly, then let them sit for a couple of minutes before you fry them. This makes the breading soft of gooey and it crisps up even better.

Preheat the oven to 350 degrees.

In a plate with edges or small dish &ndash I use a storage container that has a top and bottom that are large enough to hold a chicken breast and deep enough not to spill &ndash pour the bread crumbs, salt, pepper, parsley, and basil.

Using your fingers, stir them gently to ensure the mixture is well mixed up so you don&rsquot get a mouthful of basil later.

In the other dish, place the egg and milk. Use a whisk to stir until the egg it well combined. It doesn&rsquot have to be perfect, but you want the egg whites and egg yolk to be fairly well beaten.

Prepare a pan to bake them with a cooling rack atop a cookie sheet. Using the cooling rack will allow the heat to get to the underside of the chicken fingers and keep them from being soggy on one side after baking them.

Clean your chicken, and cut the breasts in half lengthwise (or thirds/quarters if they&rsquore extra plump and thick). Set up a workstation so that you can dip the chicken into the egg wash, place the chicken into the bread crumbs and gently push them onto the chicken, then set the finished chicken piece onto the cooling rack.

When all the chicken is complete, bake the chicken for 20 minutes until they start to turn golden. Depending on the kind of bread crumbs you use, they will turn more or less golden.

Panko tends to not get as brown, but it will still be done. Serve immediately, and enjoy!

Sprinkle chicken with salt, pepper, and garlic powder. Place eggs in a shallow bowl. Combine panko and cheese in another shallow bowl. Dip chicken in egg dredge in breadcrumb mixture.

Heat a large nonstick skillet over medium-high heat. Add 1 tablespoon oil swirl to coat. Add half of chicken cook 3 to 4 minutes on each side or until browned and done. Remove from pan. Repeat procedure with remaining oil and chicken. Sprinkle with parsley, and serve with lemon quarters, if desired.


Cornmeal Crusted Chicken Tenders

I make breaded chicken – whole breasts, tenders, or fillets pounded thin – all the time. I use cornmeal, bread crumbs or panko, and I mix and match the seasonings based on craving and/or instinct. I love the satisfying crunch of fried chicken, but at home I prefer to bake rather than fry. Who was it that said that people go out to eat because they don’t have deep fryers at home? Whoever it was, they definitely had me in mind.

I love all manner of deep fried things, from arancini (fried risotto balls) to chicken wings to potato skins, but I’ve always said I would never, ever own a deep fryer because I wouldn’t be able to stop frying things. Seriously. I would fry anything and everything just to see how it would turn out. Cheesecake? Throw it in the fryer. Peanut butter and jelly? Fry it. Breakfast burrito? Make it a breakfast chimichanga.

I’m getting off track here, but the point I’m trying to make is that these crispy, juicy, delicious chicken tenders provide all the satisfaction of a deep fried crunch without tossing them into a vat of hot oil. They are lightly breaded in flour, egg and seasoned cornmeal, then baked on an oiled baking sheet until golden brown.

Recipes like this are hard for me to write out because generally when I make this I add herbs and spices to the cornmeal relatively randomly, often based on what I’m craving that day. I actually had to figure out the amounts of everything I used so that I could share it with you I feel like “just sprinkle in a few dashes of cumin until it seems like enough, then add a pinch more” would not be a helpful recipe instruction for anyone.

Today, I chose a combination of smoky cumin, savoury garlic powder and sweet, spicy aleppo pepper flakes. I love the smoky sweetness of aleppo chiles, but if you can’t find them feel free to add a pinch of cayenne or red pepper flakes if you still want a bit of heat. Some mild chili powder would be a good addition as well.

I like to serve these with a quick curry mayo: basically just some light mayo, a dollop of sour cream or plain yogurt, a spoonful of curry powder and some salt and pepper. My husband likes them with plum sauce, and you can really dip them in whatever suits your fancy, or just eat them on their own. Enjoy!


Healthy Chicken Fingers

Today I am revamping one of the first recipes that I ever created for Healthy Chicken Fingers. That was a whole four years ago, guys &ndash hard to believe. Will was one year old when I started this blog. It feels like so long ago!

When I look back at my first posts, they are both inspiring because I realize how far I have come, and motivation to continue to grow and improve my photography and recipe development skills. Lets be honest my first photos are pretty bad..but are a good reminder to keep working hard.

I am the first to admit that I have a long ways to go, but considering I am self taught I feel proud of myself for getting this far. These Healthy Baked Chicken Fingers were a good reminder of why I started this blog in the first place.

I started this as a place to share healthy recipes that I was cooking for my family with my friends and family. If I can inspire even a few people to cook a little healthier and have fun in the kitchen, then I feel like my goal has been accomplished.

And so here we are with these simple Healthy Chicken Fingers. These are a kid and adult favorite. I mean who doesn&rsquot like chicken fingers, right? It&rsquos the perfect weeknight dinner when you just don&rsquot have time to make something fancy.

This recipe uses panko breadcrumbs, which I love because of their added crunch, but you can always use regular breadcrumbs. My recipes uses a variety of spices including thyme, parsley and paprika, but if your kids aren&rsquot into the spice you can modify to their tastes.

To lighten up this recipe, I used olive oil instead of butter but you can easily melt 3 Tablespoons of butter and use that instead of olive oil if you want.

In my house we like to pair these with this Simple Parmesan Garlic Green Beans and this Cucumber Yogurt Salad. They are all easy recipes that you can whip up in no time. If you are menu planning these are a winner and a must try for those busy nights.

COOKING TIPS:

  • You get to control what goes in this, which is the best part! If your family likes some spice add some cayenne pepper. If your family hates spice leave it out all together and stick with salt, pepper and maybe a little garlic powder.
  • You can use regular breadcrumbs or panko breadcrumbs on these chicken tenders. Panko breadcrumbs will create a crunchier texture.
  • You can use these chicken tenders in a variety of meals. Try adding them to a salad, a rice bowl or chop it up and add it to taco.

HOW TO MAKE CHICKEN TENDERS?

You are going to love how easy it is to make these healthy, delicious chicken fingers!

PREPARE THE BREADING FOR THE TENDERS: In a shallow bowl combine the ingredients for the breading which includes panko breadcrumbs, parmesan cheese, garlic powder, thyme, parsley, paprika, salt and pepper. Stir it until it is well combined. Set this aside. You can feel free to adjust the spices to your liking.

DREDGE THE CHICKEN FINGERS IN OIL AND BREADCRUMBS: Next you will pour the olive oil in a separate shallow bowl. Dredge each chicken tender in the olive oil, making sure to coat both sides. Then take the chicken tender and dredge it in the breadcrumbs, making sure both sides are coated. Put the tenders on to a non-stick baking sheet once coated.

BAKE IN THE OVEN: The best part of these chicken tender is they are baked in the oven. You don&rsquot need to try chicken tenders to get a crispy, delicious tender that your family will love. I love that this version is healthier! Preheat your oven to 400 degrees F. Bake for 25 minutes, flipping the tenders once . Sprinkle with fresh parsley if you want and serve warm with ketchup or honey mustard dipping sauce.

    Here&rsquos how to make our Ninja Foodi chicken tenders.

    It&rsquos one of our favorite Ninja Foodi chicken recipes. You can add a bit of heat if you like with some chili powder or keep them lightly breaded as you see here.

    There are no unusual hard to find ingredients used and I wrapped many in bacon which took them from good to over the top deliciousness. You chose which you like better. 😉

    This is how you&rsquoll want to set up your workspace so you can make these homemade air fryer chicken tenders like an assembly line.

    • Preheat your air fryer first to 350 degrees.
    • Spray basket with cooking spray.
    • You&rsquoll want one bowl to whisk an egg into.
    • Another bowl will have bread crumbs and some olive oil.
      • this will be your breading

      I cut 8 pieces in half and wrapped 2 halves around each chicken tender once it was breaded.

      You could use avocado oil if you&rsquod rather, I use what I have on hand. The only accessory you will need is either the air fryer basket or a wire trivet. I used the basket that came with my machine.

      Most of my Ninja air fryer recipes use this unless it&rsquos a tall piece of meat, then the trivet is better.

      There are tons of possibilities really when it comes to this. If you cannot use eggs then a coating of olive oil and a dry packaged rub or even Shake n Bake will work.

      As for bacon I wouldn&rsquot choose a thick style. Regular slices will get a bit crispier, that is our preference anyway.

      This is what our assembly line of sorts looked like. 1 slice cut in half and wrapped around works perfectly.

      Typically tenders aren&rsquot very big. Or you could use one strip and start at the bottom wrapping it all the way up. I just thought it would be easier to secure the ends with toothpicks this way.

      • I made a few without as well to taste the difference and everyone enjoyed them. With and without the added meat.

      If you just had chicken breasts handy you could use those too. I would cut them into strips similar to this size. You want them relatively thin and all of them to be the same size so they&rsquoll cook evenly in the air fryer.

      Items you&rsquoll need to make chicken tenders in the air fryer

      1. Chicken tenders
        1. or breasts cut into small strips similar to chicken fingers
        1. both used to bread chicken
        1. I keep leftovers from Chick Fil A and use those
        2. Ranch, BBQ, and fry sauce are good too

        Serve these with our baked macaroni and cheese for the perfect family friendly meal.

        • Bread the chicken
        • Cook chicken at 350 degrees for 12 minutes total
        • After 6 minutes flipping over is necessary to get crispy on both sides
        • If using bacon cook for 14 minutes
