For the preparation of the countertop I need 350 gr of digestive biscuits, 150 gr butter with a high percentage of fat (82%), 100 gr ground walnuts. I crush the biscuits and mix them with melted butter and ground walnuts. Separately, prepare an adjustable rectangular shape that I cover with cling film and then place the biscuits in the tray and press them lightly to place them evenly. Until I prepare the mousse with blueberries, I leave the top a little cold.
For the mousse, I start with the preparation of a white chocolate ganache as follows: in a pan with a thick bottom I put 200 gr of liquid fatty cream that I bring to the boil, I put it aside after the fire and I add 300 gr white chocolate. Leave it for 3-4 minutes and then mix until the chocolate dissolves.
When the ganache has cooled, I add 300 gr of concentrated blueberry syrup, for this I used the miracle pantry :), you can use any fruit puree, and mix until it is homogenous. Separately mix 500 gr whipped cream in which I add vanilla essence and incorporate cremaganache with blueberries and add 2 sachets of dissolved gelatin according to the instructions on the package.
Place the mousse in the pan over the cookie sheet and leave the cake in the fridge for at least 2 hours.
When it's ready, sprinkle white chocolate flakes on top and it's perfect for impressing family and guests on a holiday.
