  1. Preheat the oven to 190 C / Gas 5.
  2. Beat the two egg yolks together with the icing sugar, butter, bicarbonate of soda, vinegar and flour until smooth.
  3. Shape the dough into a circular log 5cm in diameter. Cut into rounds with a 2cm thickness. Arrange on a greased baking tray and press with a fork.
  4. Bake for 10 to 15 minutes until golden brown.

Tip

You can add a pinch of salt to the dough to enhance flavour.

I first had a similar combination at the famed “Back in the Day Bakery” in Savannah, GA. This small shop filled with vintage signs offers a menu of “build your own biscuits” on either their incredibly fluffy and light plain buttermilk biscuits or on their equally delicious “everything” biscuits. At the bakery, I opted to add everything from bourbon ham to house-made jam onto my biscuit and loved the sweet and savory combination of an almost French twist on a Southern staple.

When it comes to cooking eggs for breakfast sandwiches, I opt to cook them over medium rather than over easy or sunny side up, so the yolk is more jammy than runny and it doesn’t get as messy. Another option is to break the yolk just as the whites are set and right before you give the egg a flip, so the yolk remains jammy but doesn’t spurt out when you bite into the biscuit!

Empire biscuits

Mix the remaining icing sugar with 2-3 tsp of water to make a very thick icing. Spoon or pipe the icing over the top of half of the biscuits, leaving a border around the edge of each one. Top with a small piece of glacé cherry in the centre, then leave to set for 30 mins. Spread the jam over the un-iced biscuits and sandwich together with the iced halves. Will keep for two days in an airtight tin.

Is there anyone out there that can say no to a cookie?

I certainly can’t. Cookies are my one weakness.. well, that is after brownies, cakes, chocolate.. okay. So I might have more than one weakness. But these Citrus Egg Yolk Cookies? It was like my hand had a mind of its own. Always reaching for “one more cookie”…

So yeah. These cookies didn’t last long. The only reason I am not tempted to make more of these this second is that I don’t have any egg yolks on hand. At the moment anyways.

This recipe was made for the sole purpose of using up my 6 egg yolks that were hanging out in my fridge. Why did I randomly have 6 egg yolks in my fridge? Um.. old grandmother’s recipe gone wrong. Once I perfect it, I will post it on the blog.

But don’t hold your breath. I don’t think I will be perfecting that recipe any time soon.

BUT, since my grandmother’s recipe calls for 6 egg whites, I now have a recipe to use up all of those unwanted egg yolks.

This recipe is literally the result of a Google search for “recipe using 6 egg yolks”. Honestly, Google can find you anything. Every time I think I have an original idea for a recipe, after a quick Google search, I quickly come to realize it wasn’t original at all. There are at least 8 other people who have had the exact same idea.

But I love the simplicity of these cookies. This recipe doesn’t try to go overboard by packing as many flavours into one cookie as possible. Which, to be honest, was what I thought I needed to do if I was a food blogger. But can’t we just have a simple cookie every once in a while?

The only fancy thing about these cookies are the different types of extract in it. Luckily, I went on an extract shopping spree earlier this month, so I have been prepared for anything in my kitchen! But I would highly suggest you get yourself some good extracts. They are always handy to have around, and they make your baking 10x better. I promise!


Bake Off judges impressed by clever egg yolk trick they&rsquod never seen before

One contestant on last night&rsquos The Great British Bake Off impressed judges with a clever egg yolk trick that resulted in huge praise from both Prue Leith and Paul Hollywood.

Briony, who made Empire biscuits in the regional biscuit signature bake round, used cooked egg yolk in her biscuit mix to give a crumbly, lighter mixture.

&ldquoI&rsquom boiling some eggs for my biscuits,&rdquo she told judges Prue and Paul, when they questioned what she was doing.

While Paul was slightly sceptical at the idea, Prue had faith, and the method of sieving hard yolks worked, as Briony was praised for her shortbread creation.

&ldquoThe shortbread is really melt-in-the-mouth and crumbly,&rdquo Prue said, while Paul revealed they were the best biscuits that had been made in the tent that day.

So why is this method such a good trick, and how can you do it at home?

Meike Beck, Good Housekeeping&rsquos Cookery Director, explains that adding sieved, hard-boiled egg yolks to cookies and cakes makes for a very light result.

&ldquoRaw egg yolks are well known for adding richness to all sorts of baked goods, from shortcrust pastry to brioche and cakes. But adding cooked egg yolks? Well, that seems to be a well-kept secret,&rdquo she says.

&ldquoThe science behind it is that the tiny bits of yolk (and don&rsquot be tempted not to sieve it!) intersperse throughout the pastry/batter and get in the way of the gluten structure forming. You need gluten in baked goods to give them structure, but too much will give you a tough and chewy result.&rdquo

&ldquoThe result will be melt-in-the-mouth bakes, tender as can be.&rdquo

While the method is common in Northern European baking, it&rsquos not as common in baking here in the UK. And it&rsquos not just cakes and biscuits you can try this method with.

Meike reveals you can add one to two sieved, cooked egg yolks to dry ingredients of any recipes where you want a light and crumbly result &ndash even if the recipe doesn&rsquot call for it!

This is with the exception of bakes where gluten structure is a necessary part of the cooking method, such as bread and pizza crust.

And Briony&rsquos unusual method paid off, as she goes onto week two of GBBO. The first episode saw Manon win Star Baker, and Imelda leaving the tent after her regional biscuits, wagon wheels and selfie showstopper failed to impress the judges.

This Ingredient Will Turn Your Pastries Into Bakery-Worthy Desserts

Raw egg yolks add richness to all kinds of baked goods from brioche to cake, but if you’ve ever rifled around grandma’s old recipe box, you may have seen a recipe or two that calls for cooked yolks—an old-school Northern European baker’s secret. When pressed through a sieve and added to cake or cookie batters, hard-boiled egg yolks pressed through a sieve make for incredibly tender baked goods.

What happens is this: The tiny bits of cooked yolk intersperse throughout the batter and get in the way of the gluten network that forms when flour mixes with wet ingredients. Gluten is necessary in baked goods to give them structure, but too much makes for a tough, chewy crumb that’s generally undesirable in the pastry world. Cooked egg yolks prevent too much gluten (a.k.a. toughness) from developing without weighing the batter down. The result is a cake, cookie, or biscuit so tender that it feels like a mass of buttery crumbs just barely held together until they dissolve in your mouth.

You can add one to two cooked egg yolks to any recipe, even when it’s not called for and without swapping anything out. The only time you don’t want to add them to a recipe is when you want gluten for structure or chew, like in breads or pizza dough, or even some cakes, muffins, and quickbreads it’s really a technique reserved for tender pastry that is also light. Try adding them to scones, shortbread, biscuits, cornbread, and cake doughnuts—just add the sieved yolks to the dry ingredients called for in the recipe.


What to Do With Egg Yolks

Egg yolks can be stored in the refrigerator in an airtight container. If the yolks are broken, use them as soon as possible as they will dry out quickly. For unbroken yolks, cover with a tablespoon or two of water to keep them from drying out and pour off water before using. Refrigerated egg yolks stored this way should keep for two to four days.

Freezing Egg Yolks

I don’t generally recommend freezing egg yolks. They’re finicky to store and don’t keep as well as egg whites. You’re usually better off just making a batch of egg yolk cookies and freezing the cookies instead. BUT, if you have a lot of egg yolks and want to give it a try, Eggs.ca has a good article on freezing yolks.

So, what is the Taste of the Tamago Boro

These Little Egg biscuits remind me a bit of the typical spoon or drop biscuit even reminiscent of biscotti. However, without the sugar crust it was still good and yet also slightly mealy and dry. That’s a pity, because they have the fines aroma of a cookie you can find, period! Due to the dryness when I first tried them they fail with me unfortunately. Though, when I made them at home with a little twist, they turn out pretty awesome, so I really recommend you try these cookies too.

Ingredients:

  • 120 grams of potato starch
  • 10 grams of cornstarch
  • 55 gr milk powder
  • 30 gr sugar
  • 1 egg
  • 2 grams yeast (optional recipe made without)

Preparation:

  1. Heat the oven to 170°C
  2. Mix the egg and the icing sugar
  3. Add the potato starch, cornstarch and milk powder 3 times
  4. Mix well you must get a ball neither too sticky nor too dry (if necessary add a little liquid milk or a little cornstarch)
  5. Make small balls about 1 cm in diameter
  6. Bake for about 15-20 minutes
